Introduction and history

Asam Pedas is a characteristic cuisine of Malacca. It is not only relished in Malacca but also enjoyed by the Malays in Peninsular Malaysia. Due to cooking and ingredients regionality, there are differences between the taste and texture of the Malacca asam pedas and those in the other states (Hidayatul Akmal Ahmad, 2018).  


This dish is named so due to its bold flavours, sour and spicy, inherited over a large expanse of time. Relishing the piquancy of the spicy asam pedas will perfect one’s visit to Melaka. Loved by all, the asam pedas adds to the thrill of eating, the joy of excursion. 


Equipment/ Ingredients

A jenahak (type of fish/preference) 

4 tablespoons of cooking oil 

4 shallots 

5 cloves of garlic 

1 large onion 

1 inch of ginger 

1 inch of fresh turmeric 

A little black pepper 

A little fennel seed 

A little cumin 

A little fenugreek 

15 to 20 dried chilies (ground) 

1 bowl of tamarind juice

3 sticks of lemongrass (crushed) 

A little brown sugar (gula Melaka)

Shrimp paste (belacan) (to taste)

Kaffir lime leaves (to taste)

Okra (to taste) 

2 cups of water (to taste) 


Ground Ingredients

Garlic 

Red onion 

Ginger 

Fresh turmeric 

Black pepper 

Cumin 

Fennel seeds

Shrimp paste (belacan)


Method / Preparation Method / Presentation Method

1) Heat oil in a pan. 

2) Fry the fenugreek, onion, garlic and sliced ginger. 

3) Add the lemongrass (crushed). Wait until it turns golden

4) Add the finely ground ingredients. 

5) Cook until they are crisp. 

6) Add the ground chili. Wait until the chili is really crisp. 

7) When the chilies dry, add the tamarind juice. 

8) When boiling, add salt, brown sugar and kaffir leaves (daun limau purut). 

9) Add the fish.

10) As the fish is cooked, add the tamarind juice to taste. 

11) Lastly, add the cut okra. 

12) Ready to serve.
