Introduction and history

The maman plant, scientifically known as Cleome gynandra, is a type of shrub that grows in sandy areas and open land. Maman easily grows wild, especially in areas with flat, burned soil. This plant thrives when seed enhancers are scattered, and burned soil is one of the main methods for its growth. The young shoots or leaves of the maman plant have long been a traditional culinary ingredient in the state of Perlis. There are two types of maman plants, namely white maman and red maman. The leaves of the maman are pickled and served as an appetizer. The brine from the pickling process is also delicious as a dip for grilled fish. Maman leaves are rich in vitamin C and are beneficial for people suffering from anemia and rheumatism.

2 bunches of maman leaves

1 ladle of cold rice

1 tablespoon of salt

2 cups of water


Method / Preparation Method / Presentation Method

There are several methods to clean maman, including cutting off the roots of the maman leaves and soaking them to remove fine sand. After that, soak them briefly in saltwater.

Another method is to rub the maman with coarse salt until it wilts, then dry it under the sun until it is slightly dry.

Once the maman is cleaned, the pickling or fermentation process can begin by:

1. Blending the cold rice with the water until smooth. Strain the water.

2. Place the maman leaves in a jar, and pour the strained rice water into it.

3. Add a few sprigs of bird’s eye chili.

4. Seal the jar tightly and let it ferment for 3 days.

Once the maman has become sufficiently sour within three days, it can be served with slices of red onion or large onion, and bird’s eye chili.
