Introduction and history
Kuih Bunga Pudak is a traditional Malay delicacy popular in Jitra, Kedah, and a specialty of the region. This dessert is named after the color of the Pudak flower. Kuih Bunga Pudak is one of the most well-known traditional desserts in Kedah, celebrated not only for its delicious taste but also for its unique shape and preparation method.
This dessert is often served at special events such as weddings, Eid celebrations, or other festive occasions as a symbol of blessings and joy.

Ingredients for Filling:
• 1 white grated coconut
• 240g sugar
• Salt to taste
• Rose essence to taste
• Red food coloring to taste
• Green food coloring to taste
Ingredients for Outer Layer:
• 240g glutinous rice flour
• 250ml water
• 1 teaspoon fine salt
Here are the steps to prepare Kuih Bunga Pudak:
1) Roast all the ingredients for the filling over medium heat until dry.
2) Mix all the ingredients for the outer layer and let it rest for 30 minutes.
3) Heat a pan over medium heat.
4) Take a spoonful of the flour mixture, place it in a sieve, and spread the flour into the pan to form a round shape.
5) Place the filling in the center and fold it into a square shape. Heat the kuih briefly, then remove it from the pan.
6) Repeat the steps until the mixture is finished.
