Introduction and history
Umbut Pisang Curry is a special dish popular in the Baling District of Kedah.
This curry is often served with steaming hot rice and is a staple in the daily menu of Kedah residents, especially during festivals or communal feasts.

Only the banana shoot is used, along with other basic ingredients such as free-range chicken, turmeric, curry leaves, curry powder, cinnamon sticks, star anise, sliced shallots and garlic, diluted coconut milk, thick coconut milk, ground chili paste, and salt or sugar.
Sauté the sliced ingredients, then add the cinnamon stick and star anise until fragrant. Next, add the chili paste, turmeric, curry powder, and curry leaves. Pour in diluted coconut milk, and once the oil separates, add more diluted coconut milk. Add the chicken, and once the chicken is tender, add the banana shoot. When the shoot becomes tender, stir in the thick coconut milk, and season with salt or sugar to taste.
