Introduction and history
Kueh Karas is a traditional sweet treat made from rice flour. It looks like weaved mesh of very fine and thin noodles, shaped into pieces like large cookies (semi-circular), triangle or rolled. It is crunchy and sweet, eaten especially at tea-time with coffee. Kueh karas becomes snacks of choice at events and ceremonies like Hari Raya Aidilfitri and Aidiladha.
• 1 packet (500gm) of rice flour
• 1 cup of sugar
• 1 ½ cups of water
Preparation
1. Dissolve the sugar and pour it into the rice flour and mix.
2. Pour the mixture into a tiny-hole mould.
3. Heat the oil in a pan (not overly hot). Hold the mould on top of the pan so that the mixture will flow down (in very fine strands) into the oil, (like piping thin whipping cream onto cakes),
4. Twirl the mould from the edges of the pan six rounds, then to the middle of the pan another five to six rounds. Repeat the steps twice, ensuring the noodle-like dough in the oil remain flat and thin (like a piece of paper) as it must be folded into shapes afterwards.
5. After twirling the mixture into the oil, leave the mesh in the oil for five seconds. Then, with a ladle, fold the mesh’s edges into itself, and fold it again into a triangle. Fry and turn it time to time until it turns golden brown.
6. This kueh karas is quick to cook that it must be fried for two to three minutes only. When it is lifted from the pan onto a plate, it is still soft. It will harden and turn crunchy as it cools.
