Introduction and history

Kuih Karas is a traditional food made from rice flour. It has a fine, noodle-like texture, similar to vermicelli, but with a crispy and sweet taste. This dish is made by using a slightly runny rice flour batter, which is fried in hot oil using a special mold, typically a perforated coconut shell. In the past, kuih Karas was folded into a triangular shape once cooked. However, nowadays, it is made in various shapes, such as rolls or half-circles.

1 packet of rice flour

1 cup of sugar

1 1/2 cups of water


Method / Preparation Method / Presentation Method

Stir the sugar with water until dissolved. Then, pour it into the rice flour. Mix well.

Pour the mixture into the coconut shell mold. In modern times, some use a 3- or 5-pointed roti jala mold to shape the kuih karas.

Heat the oil. Make sure the oil is not too hot.

Start pouring the mixture from the edge of the pan, making 5 to 6 rounds, before moving to the center of the pan. Ensure the strands are not too thick for easy folding.

Repeat the process of pouring from the edge to the center for another 5 to 6 rounds.

Fold the kuih karas into two parts using a spatula. Then, fold it again into a triangle shape.

Fry briefly, turning occasionally, until golden brown. Remove and drain the oil.

When removed, the texture of the kuih karas will still be soft, but it will harden on its own as it cools.

Enjoy the delicious and crispy kuih karas, a traditional treat with few ingredients but rich in flavor.
