Introduction and history

Likkuk Chicken or Likku' Chicken is a famous traditional dish among the Bugis ethnic community in Sabah, especially in the Tawau, Lahad Datu, and Sandakan districts. The name of this dish comes from the Bugis word 'likuk' which means galangal where it is the main ingredient of this dish (Nafisah Ali, 2024). Likkuk Chicken is said to reflect the culinary cultural identity of the Bugis community which is rich in the use of local spices and unique preparation methods.

Equipment/ Ingredients

Main ingredients:

1 village chicken - cut into small pieces according to each individual's taste

1 liter of condensed coconut milk - 4 coconuts

kg young galangal -  finely grated

4 tablespoons coconut paste 

2 tablespoons of turmeric powder 

1 tablespoon of salt 

½ tablespoon of seasoning powder

1 ½  tablespoons of sugar 

2 leaves of turmeric - finely sliced

5 kaffir lime leaves

1 tablespoon ground dried chilies 

100 ml of cooking oil 

½ cup tamarind water (just a little) 

Ground Ingredients:

2 inches of ginger

2 inches of live turmeric

15 lemongrass sticks

10 shallots

3 garlic cloves

Spice ingredients:

2 star anise

4 cardamom

3 cm cinnamon

4-5 cloves


Method / Preparation Method / Presentation Method

1. Wash and clean village the chicken or old chicken 

2. Heat the oil and stir-fry the spices and the grounded ingredients.

3. Add grated galangal and grounded dried chilies

4. Once it smells and looks half-crispy, add the village chicken and mix evenly.

5. Slowly pour coconut milk and tamarind water.

6. Add salt, seasoning powder, sugar and turmeric powder.

7. When the cooking starts to dry, add coconut paste, turmeric leaves, kaffir lime leaves and mix evenly until combined.

8. Leave it for a few minutes before the chicken is completely soft and dry.

9. Likkuk Chicken is ready to be served with rice or burasak, a type of ethnic Bugis ketupat.
