Introduction and history
Kuih Bugis Mandi, also known as Kuih Badak Berendam or Kuih Puteri Mandi in other states, is a traditional sweet treat of the Bugis in Selangor. These small cakes are easy to prepare at home, consisting of three bits: the cake balls, the coconut filling and the gravy.
Ingredients for Dough
- 360g of glutinous rice flour
- 320ml of coconut milk
- 1 large tablespoon of tapioca flour
- 1 teaspoon of white sugar
- A bit of green food colouring, or other colours of choice
Ingredients for Coconut Filling
- 50ml of water
- Three large spoons of white sugar
- A piece of brown sugar (gula melaka)
- 2 pandan leaves
- 1 large spoon of wheat flour
- Grated coconut (white part only)
Ingredients for Gravy
- 700ml of thick coconut milk (1 coconut)
- 2 large spoons of glutinous rice flour
- 1 pandan leaf that is tied together
- Salt to taste
• Combine all ingredients to make the dough. Add water as required. Divide the dough into equal parts, add some food coloring and knead well.
• Shape the dough into balls and fill it with the already sweeted coconut filling.
• Bring water to a boil.
• Place the cake balls into the boiling water.
• When the cake balls begin to float, take them out to cool.
• Pour coconut milk gravy over them.
• Ready to serve.
