Introduction and history
Rendang Tok is one of the choice Perak traditional foods. This cooking was created by Perak royal family a long time ago as only they were able to afford the many expensive spices required for it. But at present, rendang tok is cooked, eaten and sold by all, and has become a popular cuisine in Kuala Kangsar.
INGREDIENTS
• 1kg of beef
• 10 red onions (finely ground)
• 5 garlic (finely ground)
• 3cm of galangal (finely ground)
• 3cm ginger (finely ground)
• 5 lemongrasses (finely ground)
• 5 spoons of chili (finely ground)
• A little turmeric (finely ground)
• 2 finely sliced turmeric leaves
• 1 tablespoon coriander (dry fried and finely ground)
• 1 tablespoon of cumin (finely ground)
• 1 tablespoon of ground white cumin
• 1kg thick coconut milk
• 50 grams of gula melaka
• 3 tablespoons kerisik
• 15ml of tamarind water
• Salt to taste
Stir-fry Ingredients
• 2 cinnamon sticks
• 4 star anise
• 5 cloves
• 6 cardamom seeds
HOW TO COOK
1. Mix the meat with ground coriander, cumin and cumin. Then marinate overnight.
2. After marinating, add a little water and cook over low heat until tender. Then set it aside.
3. Heat the oil and stir-fry the blended ingredients with cinnamon bark, star anise, cloves and cardamom until fragrant.
4. After that, add the meat, coconut milk and kerisik, and stir continuously on low heat.
5. Add tamarind juice, gula melaka, turmeric leaves and stir until dry. When the rendang is dry, add salt to taste.
6. Ready to serve.

sedap. Kaedah memasak Rendang Tok, ia dikacau sehingga kering dan bertukar
menjadi warna hitam.
