Introduction and history

In the past, on the East Coast, fishermen brought Nasi Dagang to sea.  The rice, cooked with coconut milk and eaten with gulai ikan (fish curry), was filling and appetizing any time, befitting the hardworking men at sea.  It was also a good source of energy for one to work in the endless scorching hot sun.


Nasi dagang is a local specialty of Terengganu. A delicate blend of plain rice and glutinous rice, steamed with coconut milk, nasi dagang is reputable with its distinctive taste and aroma. Served with gravy, cooked using special spices, the rice is eaten with pickled cucumbers. The gravy of the aya hitam fish is prepared with spices different from the ones sold in Malaysian supermarkets. The gravy spices are only produced in Terengganu.  The fish cooked to pair with nasi dagang is Aye Hitam, a large fish cut into 2-inch pieces.


Generally nasi dagang is a Terengganu breakfast dish.  But as times change, one also specially serves it to visitors or at events. In most areas of Terengganu, the manner nasi dagang is wrapped has changed.  Traditionally, it was wrapped in banana leaves shaped into a cone (kelosong).  The banana leaves then were secured with lidi, the coconut leave stalk, cut roughly one inch and sharpened. As times change, at present, it is served in plastic wrappers or containers. But in certain areas of the district of Kemaman, nasi dagang is still wrapped in banana leaves shaped into a cone.


Functions and Roles

Nasi dagang functions as routine meals for the people of Terengganu.  Since 2009, it has been listed as one of the national heritage foods.

Equipment/ Ingredients

Rice Ingredients

 

• 2 pots of rice 

• 2 spoons of glutinous rice 

• Ginger (finely sliced) 

• Shallot (finely sliced) 

• 1/2 packet of coconut milk 

• Salt and sugar 

• 2 spoons of fenugreek 


Gulai Ikan Aye Ingredients


• A longtail tuna  

• 11 red onion cloves 

• 1 garlic clove 

• 1 inch ginger 

• 1 handful of dried chilies (boiled) 

• 1 small packet of fish curry spices • 1 small packet of Rose brand spice 

• 2 small packets of coconut milk 

• Sufficient water 

• Asam Keping  

• Brown sugar  

• Salt 

• Red and green chilies 


Pickled Cucumber Ingredients


• Cucumber 

• Radish 

• 2 shallots 

• 1 large pepper 

• 3 tablespoons of sugar 

• 1 teaspoon of salt 

• 3 tablespoons of vinegar

How to Cook the Rice of Nasi Dagang


1. Split the rice into two.

2. Steam half of the rice with the glutinous half cooked. 

3. Then mix the second half of the rice with the half-cooked steamed rice in a large basin. Set aside. 

4. In another bowl, add coconut milk, ginger, onion, fenugreek, sugar and salt. Stir well. 

5. Put it in a large bowl and mix well slowly to avoid breaking the rice. 

6. Steam the mixed rice until fully cooked. 

7. Place the cooked rice in a container lined with banana leaves.

8. Press the rice a little to make it compact.

9. Cover the rice with banana leaves. 

10. Ready to serve. 


How to Make Gulai Ikan Aye  


1. Boil the fish with tamarind paste and salt on low heat.

2. Boil until it dries up a little. 

3. Grind red onion, garlic, ginger and dry chili. 

4. Heat a lot of oil and stir-fry the blended ingredients, spices, a little water with sugar. Sauté them. 

5. Repeat this stir-fry three times and set aside. 

6. In another pot, pour the coconut milk and a little water. Then put the stir-fried ingredients in the pot.  Heat and stir well. 

7. Add salt, tamarind paste, boiled fish and chili rice.

8. Cook over low heat until the sauce thickens.

9. Ready to serve. 


How to Make Pickled Cucumbers

 

1. Remove the seeds of the cucumber and large pepper.

2. Slice the cucumber, chili, carrots and shallots finely. 

3. Mix all ingredients 

4. Ready to serve.
