Introduction and history
The word Pansoh generally means food cooked in bamboo in the Iban language. Among the Iban community, various dishes are often cooked in bamboo according to individual tastes, including chicken and fish. Chicken cooked in bamboo is known as ayam pansoh. This traditional Iban dish is often served as a special side dish or tabas, which means a special dish or appetizer, especially during celebrations or specific ceremonies such as welcoming guests.

The basic ingredients for preparing ayam pansoh consist of bamboo (lemang bamboo), chicken cut into small pieces, half a cup of water, garlic, shallots, torch ginger flower, ginger, lemongrass, large chilies, salt, seasoning powder, and cassava leaves.
Prepare the garlic and shallots by pounding them until fine, while the torch ginger flower, ginger, lemongrass, and large chilies should be thinly sliced. Then, mix the cut chicken with all the finely pounded and sliced ingredients until well combined. To enhance the flavour, add salt and seasoning to taste. The next step is to place the marinated chicken mixture into the bamboo before placing it over the fire to be grilled or cooked. During the cooking process with moderate heat, the bamboo's opening should be covered or plugged with cassava leaves. At the same time, the bamboo should be rotated regularly to prevent burning and to ensure the chicken cooks evenly. When the cassava leaves' stem turns brown, it indicates that the ayam pansoh is cooked and ready to be served.
