Introduction and history
Nasi Ambeng (ambeng rice) is an unusual rice dish of Javanese community in Malaysia. It is atypical as the white rice is placed in the middle of a large tray, a talam, lined with banana leaves. Nasi ambeng is served with many side dishes: salted fish, serunding kelapa, fried nuts, fried sambal Jawa, fried mee, chicken cooked in soy sauce (ungkep). There are some who serve it with rempeyek, boiled eggs and opor chicken (chicken cooked in coconut milk). These rich side dishes are an assembly of colours, lavishly placed around the rice, also in the tray, making it more mouth-watering.
Ambeng rice is a favorite at Javanese weddings, tahlil ceremonies and events in Selangor and Johor. One and tourists can also find nasi ambeng at various restauraunts.
Grated Coconut Serunding
- 2 grated coconuts
- 1 inch of turmeric
- 4 tablespoons of grated dried chilli
- A fistful of anchovies
- 4 lemongrass stalks
- 5 cloves of garlic
- 2 large red onions
- 1 tablespoon of coriander
- 1 tablespoon of sweet cumin
- 1 tablespoon of white cumin
- A bit of tamarind
- Salt and sugar to taste
Sambal Jawa
- 3 pieces of tempe
- Long beans (cut diagonally)
- 3 taufus cut into cubes
- Su’un (transparent or cellophane noodles)
- 8 potatoes, each cut into four
- 5 cloves of garlic
- 3 large onions
- A fistful of anchovies
- Grated dried chilli
- Cut large red chillies
- Soy sauce
- Salt to taste
Chicken Cooked in Soy Sauce
- Chicken cut into four (for tahlil ceremony)
- 2 inches of ginger
- A bit of turmeric powder
- Cinnamon, star anise and cardamom
- 2 whole garlics
- 10 or more large red onions
- 2 ladles of grated dried chilli
- Soy sauce
- White pepper
- Cut onions
- Red chillies sliced open in the middle
- Noodles and white rice cooked with pandan leaves
- Fried salted fish
Serunding Kelapa
• Blend the garlic, onion, anchovies, turmeric, lemongrass, coriander, sweet and white cumin.
• Saute Item (1) and add dried chilli.
• When half cooked, add salt, sugar and tamarind. Add more sugar because the serunding is spicy-sweet flavor.
• Add the grated coconut.
• Stir the mixture continuously until a bit dry. It is tastier when the serunding is not too dry.
Sambal Jawa
• Fry the tempe, tofu and potatoes.
• Cut the suhun (celophane noodles) and the dry tofu.
• Saute the garlic, red onion and anchovies that have been grinded together.
• Add in dried chilli.
• Saute them.
• Add soy sauce, dry tofu, cellophane noodles and long beans.
• Add in tempe, tofu and potatoes.
• Stir.
• Add the sliced chillies, salt and sugar to taste.
• Ready to serve.
Notes: One may also add other ingredients such as chicken, livers, shrimp and carrots. It all comes down to preference.
Chicken Cooked in Soy Sauce
- Mix salt and turmeric into a paste, lather it over the chicken and later fry it.
- After that, saute the herbs.
- Add cinnamon, cardamom and star anise.
- Add the grinded ginger, garlic and red onion.
- Add a teaspoon of turmeric powder, dried chilli.
Saute them.
- Add in a bit of white pepper, and mix in the soy sauce into the mixture.
- When the herbs are cooked, mix with the fried chicken.
- Later, add salt to taste.
- Finally, add the cut onions and red chilli.
Notes: The soy gravy of this recipe need to be thick thus must be simmered long.
