FRIED KUEW TIAW

Char Kuew Teow is
made of a flat shape of kuey teow noodles about 1 centimeter in width, fried overheat and mixed with soy sauce, chilies, prawns, cockle, egg, bean sprout,s and
Chinese chive. Occasionally, slices of Chinese sausage and fish cake or other
suitable ingredients are added according to the local flavor.
When this dish was created the main target was the laborers. The high-fat content and cheap price made it popular among them as a cheap source of energy and nutrients. During those times this dish was normally sold by fishermen, farmers, and cockle collectors in the late afternoons as an additional source of income.
This dish has many variations. Among them are adding in duck egg to enrich the taste or crab meat to increase the sweetness of the dish.
