Pek Nga or Lempeng Kelapa (Coconut Pancake) is eaten together with fish curry or glutinous rice with grated coconut and dried fish. The basic ingredients are wheat flour, grated coconut, granulated sugar, butter, salt and an adequate amount of water.
Mix all the ingredients and leave for about 10 minutes to let the grated coconut blends well with the flour. Heat a pan and smear a little cooking oil. (Note that some areas use a special cooking utensil and do not use cooking oil). Take a spoonful of the mixture and spread on the pan. Turn it over when one side is cooked. Ensure that both sides are cooked and crispy before lifting it from the pan.
