TEPUNG SERUNAI CAKE

Kuih Tepung Serunai or also known as Pasung
Flour Cake is one of the traditional foods that can be found in the states of
Kelantan, Pahang, and Terengganu. This cake is made from rice flour. It is
placed into a cone-shaped mold using banana leaves or also known as banana leaf
casing.
INGREDIENTS FOR THE BOTTOM PART OF THE CAKE:
• 300 g brown sugar
• 1 egg
• 200 g of rice flour
• 100 g of sago flour
• 2 cups of thick coconut milk
INGREDIENTS FOR THE TOP PART OF THE CAKE:
• 500 g of rice flour
• 2 cups of thick coconut milk
• 1/2 teaspoon salt
• Sufficient banana leaves
• Sharpened skewer blades
HOW TO PREPARE AND COOK:
1. Cut a 9-inch round banana leaf. Then cut the round leaf into two (semi-spheres). Roll from left to right and bounce like a cone. Pin with skewers.
2. Meanwhile prepare the steamer. After boiling put the leaf casing banana in the slot of the steamer hole.
3. In a large bowl mix all the ingredients. Blend until combined.
4. In another large bowl, mix the top ingredients until well combined.
5. Scoop out the bottom and put it in the banana leaf casing. Half-fill the casing and steam until 3/4 cooked.
6. Then spoon the top and steam until cooked. Ready for the dish.
