KELUPIS - GLUTINOUS RICE CAKE

Kelupis is a traditional food of the Bisaya
ethnic in the district of Semporna, Sabah. This cake is served during weddings
and festivities such as the Moslems festival of Hari Raya. The main ingredients
are glutinous rice, coconut milk, pandanus leaf, banana leaf, and an adequate
amount of salt.
The way how to prepare this dish is, to boil together the coconut milk and pandanus
leaf till oil comes out. Then add in the glutinous rice and salt. Stir till
half cooked and the coconut milk dries up. Finally, wrap the rice in the banana
leaf and steam it till cooked.
