CHICKEN COOKED IN BAMBOO

'Pansoh' means food cooked in bamboo. Therefore, Ayam Pansoh means 'chicken cooked in bamboo'. This traditional Iban cuisine is a side dish as well as 'tabas', or appetizer, during celebrations.

Normally an aged chicken is used together with lemon grass, ginger, galangal shoot, and salt as well as food enhancer. All these ingredients are blended then inserted into the bamboo with the chicken. Tapioca shoot is placed at the bamboo tip to produce an aromatic scent. The bamboo is grilled using charcoal and firewood.
