INGKUNG RICE CHICKEN

'Ingkung' means giving oneself to the Almighty and a sign of purity, like an infant who is still pure without any sins. Thus, this traditional food of the Javanese in Selangor, which is based on white rice, is normally served during religious ceremonies. The white rice is served together with a dish of which the ingredients are locally-bred chicken, coconut milk, lemon grass, brown sugar, kaffir lime leaf, galangal, coriander, garlic, red onion, and an adequate amount of salt.

To prepare the special chicken dish grind all the ingredients except the chicken, lemon grass, kaffir lime leaf and coconut milk, put into a cooking pot, cook with a low heat and stir until aromatic. When oil surfaces add in the coconut milk, lemon grass, kaffir lime leaf and salt to taste. When the mixture blends add in the chicken and cook till tender. Slices of cucumber, tomato and chilies can be used for garnishing.
